Matt Birong was born on May 23, 1977, in Burlington, Vermont. He was raised in the town of Essex, Vermont. From a young age, Matt showed a keen interest in the culinary arts, which led him to pursue formal education in this field. He attended the New England Culinary Institute, where he graduated with a degree in Culinary Arts.

Over his 20+ year career, Matt Birong has worked in various fine dining establishments across major cities such as Manhattan, Boston, and Burlington. His culinary journey has been marked by a commitment to excellence and a passion for locally-sourced food. In 2007, Matt became the Chef/Owner of 3 Squares Café, a casual eatery located in Downtown Vergennes, Vermont. His café has become well-known for its emphasis on fresh, local ingredients and its role in promoting Vermont’s Farm to Table movement.

Environmental Initiatives In addition to his culinary endeavors, Matt Birong is a partner in Cacao Bosque/Reserva Zorzal, an agricultural and environmental preservation project based in the Dominican Republic. This project reflects his dedication to sustainable practices and environmental conservation.

Matt Birong’s political career began in earnest when he was elected to the Vermont House of Representatives in 2019, representing the Addison-3 district. As a member of the Democratic Party, he has been actively involved in various legislative committees. He serves as the Vice Chair of the House Committee on Government Operations and Military Affairs, and is also a member of the Canvassing Committee, the Special Committee on Impeachment Inquiry, and the Sports Betting Study Committee.

Matt Birong is supported by his wife, Danelle Lello Birong, who is a real estate broker. The couple resides in Vergennes, Vermont, along with their rescue dog, Luna. Matt’s personal and professional life is characterized by a strong commitment to his community, his family, and his passion for culinary arts and sustainable practices.

In 2016, Matt Birong was named a Rising Star/40 under 40 by Vermont Business Magazine, recognizing his contributions to the culinary field and his community. He was also a member of the Vermont delegation to the Democratic National Convention in the same year.
